Avocado Green Bean Salad

  • 1 lb green beans, fresh
  • 2 avocados
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped
  • Dressing:
  • 6 garlic cloves
  • 2 Tbsp Olive oil
  • 1 tsp salt
  • Pepper, as desired
  1. After the green beans are washed and dried, trim the ends off. If the green beans are large cut in half. Place beans in a steamer to cook for about 15 minutes. When its done, transfer into a large bowl.
  2. To prepare dressing, mince garlic and place in a small bowl. Add salt and press down with a back of fork to release juice from garlic. Add oil and pepper. Taste to see if tastes as desired.
  3. Add dressing, parsley and dill to the green beans.
  4. Slice the avocado in half and remove the pit. Hold the half of avocado against a hard surface. Make ½” crosshatch incisions in flesh of each avocado half with knife, cutting down to, but not through the skin. Insert spoon between the skin and flesh and gently scoop out avocado cubes.Add the avocado and gently toss the salad.
  5. Enjoy!
