  • Filling:
  • 6 cups fresh strawberries
  • 4 tbsp Demerara or raw sugar
  • 2 tbsp lemon juice
  • 1 tsp cinnamon
  • Cobbler Crust:
  • ⅔ cup all-purpose flour
  • ½ cup sugar
  • ½ cup softened butter
  • 1 tsp vanilla extract
  • ¾ tsp baking powder
  • 1 egg
  • ¼ tsp salt

  2. Preheat oven to 350F. Grease 9x10 baking dish and set aside
  3. In a bowl stir together strawberries, lemon juice, sugar, and cinnamon.
  4. Cream together sugar and butter with hand-held mixer or KitchenAid. Once the mixture is creamy, add egg, vanilla extract, cinnamon, salt, baking powder and flour, mixing after each added ingredient until everything is combined.
  5. Place strawberries into baking dish, using an ice cream scoop, dollop dough over strawberries. Do not spread.
  6. Bake for 35-40 minutes, or until crust is golden brown. Top with Vanilla ice cream and enjoy!
