Easy Peasy Strawberry Cobbler

Ingredients
- Filling:
- 6 cups fresh strawberries
- 4 tbsp Demerara or raw sugar
- 2 tbsp lemon juice
- 1 tsp cinnamon
- Cobbler Crust:
- ⅔ cup all-purpose flour
- ½ cup sugar
- ½ cup softened butter
- 1 tsp vanilla extract
- ¾ tsp baking powder
- 1 egg
- ¼ tsp salt

- Instructions:
- Preheat oven to 350F. Grease 9x10 baking dish and set aside
- In a bowl stir together strawberries, lemon juice, sugar, and cinnamon.
- Cream together sugar and butter with hand-held mixer or KitchenAid. Once the mixture is creamy, add egg, vanilla extract, cinnamon, salt, baking powder and flour, mixing after each added ingredient until everything is combined.
- Place strawberries into baking dish, using an ice cream scoop, dollop dough over strawberries. Do not spread.
- Bake for 35-40 minutes, or until crust is golden brown. Top with Vanilla ice cream and enjoy!
