Moist Apple Cake

Ingredients
- ¾ cup flour
- 2 room temperature eggs
- ½ cup room temperature milk
- ¼ cup sugar
- 2 Tbsp butter, melted
- 1 tsp baking powder
- pinch of salt
- 1 tsp vanilla extract
- 4 apples (2lbs)
- juice of ½ lemon (optional )
Instructions
- Preheat the oven to 375°F and set an oven rack in the middle position. Grease a 8-inch regular cake pan with butter, line the bottom and the sides of the pan with parchment paper and grease again. Beat eggs with a pinch of salt until foamy (about 1-2 minutes ). Add sugar and vanilla extract, beat until fluffy white (about 3-4 minutes). Then add milk and cooled melted butter and mix it until incorporated. Set it aside.
- Peel and core apples grate on a wide holes (that look like a smiley) to even thickness slices. If you prefer you can add ½ lemon juice so apples won't get dark. Once the apples ready, add 1 tsp of baking powder into dough and mix well. Add apples and mix everything to make sure all apples are covered in the dough.
- Scrape the batter and press into the prepared pan and even the top. Sprinkle evenly with 1 tablespoon of granulated sugar. Bake for about 45 - 60 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool on a rack.
