Moist Apple Cake

  • ¾ cup flour
  • 2 room temperature eggs
  • ½ cup room temperature milk
  • ¼ cup sugar
  • 2 Tbsp butter, melted
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla extract
  • 4 apples (2lbs)
  • juice of ½ lemon (optional )
  1. Preheat the oven to 375°F and set an oven rack in the middle position. Grease a 8-inch regular cake pan with butter, line the bottom and the sides of the pan with parchment paper and grease again. Beat eggs with a pinch of salt until foamy (about 1-2 minutes ). Add sugar and vanilla extract, beat until fluffy white (about 3-4 minutes). Then add milk and cooled melted butter and mix it until incorporated. Set it aside.
  2. Peel and core apples grate on a wide holes (that look like a smiley) to even thickness slices. If you prefer you can add ½ lemon juice so apples won't get dark. Once the apples ready, add 1 tsp of baking powder into dough and mix well. Add apples and mix everything to make sure all apples are covered in the dough.
  3. Scrape the batter and press into the prepared pan and even the top. Sprinkle evenly with 1 tablespoon of granulated sugar. Bake for about 45 - 60 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool on a rack.
