Nothing is better than on a cool fall morning to start with a mug of coffee and pumpkin waffles. Every bite of these Pumpkin Waffles tastes like autumn heaven. This recipe is simple to make.

  • 2 cups all-purpose Flour
  • 3 tsps baking Powder
  • ⅓ cup brown Sugar
  • 2 tsps Pumpkin Pie Spice
  • 3 large Eggs
  • 3 Tbsps Grapeseed Oil
  • 2 cups Buttermilk
  • 1 cup Pumpkin Puree
  • 1 tsp Vanilla Extract
Instructions
  1. In a medium bowl, whisk together flour, spice, sugar, and baking powder. In a large bowl, whisk together, eggs, buttermilk, pumpkin puree, oil and vanilla extract.
  2. Add flour mixture to wet mixture and mix until batter is combined.
  3. Lightly coat waffle iron with cooking spray. Pour about 1 cup batter into center of iron (amount may vary depending on size of iron), spreading evenly with a spatula. Cook until waffles are golden brown and crisp, 7 to 8 minutes. Remove from waffle maker machine and quickly toss onto a plate. Allow it cool slightly. Repeat with remaining batter. Serve with pumpkin syrup or maple syrup.
