Tasty Kale Salad

Ingredients
  • 1 bunch kale, wash and strip to small or medium pieces, ribs removed
  • 2 Tbsp sesame oil
  • 1 Tbsp lemon juice
  • 1 tsp salt, as desired
  • squeeze of lemon juice
  • sesame seeds to garnish
Instructions
  1. Wash and dry kale. Strip it by removing very thick rib down the center of a kale leaf. Then tear the kale into small pieces. Make sure that leaves are not wilted or brown in anyway. Place it in a medium bowl. Add salt and massage kale firmly so the amount of kale in the bowl shrinks half the size.
  2. Add oil and lemon juice and mix it well. Taste to see if maybe you will need more oil or salt. For best results allow the kale salad to sit for a couple of hours or overnight to marinate. Garnish with some sesame seeds.Enjoy!
